tiny cookies…

…today was a cold day. we were outside for a total of 15 minutes, maybe – so our day looked mostly like this…kind of in a ramshackle sort of mess. but we did take a while in the afternoon to make peppernuts. wee little sort of spicy cookies. if you don’t already have the recipe, here’s the one i use:

3 c sugar (i know. i didn’t put that much in…seems like a lot)

1 c margarine

4 eggs

1/4 c milk

3 tsp baking powder

pinch of salt

tsp each of cinnamon, cloves, nutmeg

2 tsp black pepper

6 c flour

mix together and roll into ‘snakes’ and lay them out on pans. pop them in the freezer until firm (and of course as a child this was always the worst part about making these..’come on mom, let’s bake/eat the cookies now!’ as a minor consolation, the dough is pretty tasty.) then cut them into little coins and bake for 10 minutes at 375. i fill my pans pretty full and this makes about 4 cookie sheets worth (keep in mind, i like to make the bigger, softer version of these cookies – if you like the thin, crisp ones, adjust time and cutting accordingly).

…and just so you don’t think it’s all funsies in our onesies over here, i have to admit that baking with ella is always a huge test of my patience. i love baking, but most of all, i love baking by myself. i used to think of it as a sort of ‘bake therapy’. but, now that e doesn’t nap, there isn’t really a time for me to do that during the day. of course, i’m happy to have her ‘help’ me with the things i do around the house, and i know all the good things this fosters. but dang. it’s hard sometimes. anyway, we survived another baking adventure, and the cookies…oh, they are tasty.
