…we eat a lot of crackers in this house – usually there are three or four boxes open at a time. i’ve thought a few times about making crackers myself, but never got around to it. but on saturday i looked up a recipe, which seemed simple enough, and made a batch. after i made them (and ate half the bowl) i had the thought (just like after i learned to make tortillas or pie crust) ‘why haven’t i done this before??’  the crackers were definitely tasty, though probably would have been more cracker-like if i had more patience when it comes to rolling out dough. they were definitely not all the hassle that i thought making crackers would be.  i’d like to try them too with cinnamon and sugar instead of salt….

wheat crackers – from the More With Less cookbook:

mix: 3c white flour, 1c whole wheat flour, 1tsp. baking powder, 1/2 tsp. salt (i also added rosemary and dill)

cut in: 3/4 c margarine

then: beat one egg. pour into measuring cup and add enough milk to make 1c liquid. add to dry ingredients

form a ball, knead lightly, divide into four balls and roll out each. place on a baking sheet and cut with knife or pizza cutter into desired cracker sizes. sprinkle with salt – bake for 7-10 minutes at 425
